One of my favorite Christmas Cookies. The kids love to help make this simple Waffle Cookies Recipe! They are perfect for cookie exchanges and for gifts!

One of my favorite cookie recipes of all time. These Vanilla Waffle Cookies signify the beginning of the holiday season for me. I “bake” enough for an army every year, and they are made right on a waffle iron.They are so delicious by themselves, with a cup of coffee, or dipping in some chocolate.

Ingredients

Everything to make these cookies is usually on hand.

  • eggs
  • butteror margarine
  • Brown Sugar
  • sugar
  • Vanilla
  • salt
  • Baking Soda
  • all purpose flour

Instructions

  • Plug in Waffle Iron to preheat.
  • Melt Butter. Mix with the sugars until well blended.
  • Add eggs and vanilla, mix on medium speed for 2 minutes.
  • Add salt, baking soda, and enough flour to make dough stiff (about 9 cups give or take.)
  • Roll into walnut size balls and place in waffle iron about 2 minutes or until done. I used my handy cookie scoop! Much faster. Remove and repeat with all of the cookie dough.
  • Store cookies in an airtight container.
  • Can be frozen for up to 3 months.

Notes

This recipe makes a gazillion cookies! Seriously! That is a number…a gazillion. It is huge! You can cut it in half! They also freeze really well! Great for putting in a gallon Ziploc in the back of the Freezer and finding them in February! That is a pleasant surprise!

Shhh…..don’t tell anybody, but you can also dip them in melted chocolate….dark or white! So good! These are great with a cup of coffee or cocoa, or just by themselves.

Oh, and you need a waffle iron to make them. You guys will have to tell me what you think of these Vanilla Waffle Cookies!

Equipment

Ingredients

  • 8 eggs
  • 2 cups butter or margarine
  • 1 Cup Brown Sugar packed
  • 2 Cups sugar
  • 1 tsp Vanilla
  • 1/4 tsp salt
  • 1 tsp Baking Soda
  • 9 cups all purpose flour +/-

Instructions

  • Plug in Waffle Iron to preheat.

  3. I’m wondering if you could add chocolate chips??? Or would I be better off melting milk chocolate chips and dipping the cookie in it?

  4. I made these over the weekend and they are awesome! I cut the recipe in half and it still made a ton. I drizzled milk and white chocolate on top and it adds a little extra sweetness. I am definitely going to be making these in the future.

  5. EXCELLENT! This is what my grandmother used to make. Something was different though. I talked with my sister who said grandma used a shot of bourbon in her cookies to give them that sort of rich smokie aftertaste. Tried it and the flavor was amazing. Brought back so many memories. Oh, and don’t worry that little bit of alcohol (bourbon) in this large of a cookie batch is just for flavor. Thanks for the recipe.

    1. This is an old Belgium recipe. There are many recipes. My family favorite is 1# butter, 2# brown sugar, cream well add 8 egg yolks and 2tsp vanilla,mix do not over beat. Then Ann 2# flour Whip egg whites to very soft peaks and fold into batter. I use my hands because it is a lot of dough. Gloved of course. My cousin skips the folding part and his cookies are good too. Folded egg whites may make them a little softer and lighter. The yield is about 8-10 dozen. You can buy a special galette iron in three thicknesses from Palmer company in Pennsylvania

  6. Haven’t made as concerned if they stick to the waffle iron. Do you spray with cooking spray?

    1. Typically they dont stick, but you can spray with non-stick cooking spray.
