If you have learned anything about me lately it’s that I amobsessedwith anything pumpkin! I can’t wait to get my first Pumpkin Spice Latte of the season and I can’t believe how early each year they are coming out! I’m jealous if you have already gotten one. But as much as Ilove a yummy PSL they can get pricey. Especially if you want one every single day of your life. Ya feel me?
However there is a solution to all this pumpkin spice madness…
…my recipe for homemade Pumkpin Spice Coffee Creamer!!! It’s genius I tell you! And soooo easy to make! And actually with the base recipe you can put pretty much any flavor you want in it. I think that’s what I love so much about this recipe…the flavor possibilities are endless!!
This recipe calls for only five ingredients. And if you are anything you probably already have those five ingredients laying around. The five ingredients I’m talking about are half and half, sweetened condensed milk (these first two ingredients are the “base” I was talking about, you can add anything to these two ingredients and make a flavored coffee creamer!), pumpkin pie spice, cinnamon and vanilla. Because no coffee creamer recipe would be complete without a little splash of vanilla. Ya hear me?
Now I don’t necessarily drink coffee everyday and I didn’t want all of my yummy coffee creamer to spoil so I had this crazy, whackadoodle idea to pour mine into ice cube trays and freeze it! What I didn’t realize was that any recipe with sweetened conduced milk doesn’t freeze properly.
I thought it would freeze into a solid overnight and I would be able to pop it out like an ice cube the next day into my coffee cup but I was wrong. I was so so so wrong! HA! It froze solid alright, but not quite solid enough to pop out. It was more of a gooey solid that I had to dig out with a spoon and I made a huge mess. It was still yummy though even if it didn’t 100% go like I planned. So was it a complete fail? Maybe not.
Another “oops” I have made with this recipe was buying heavy whipping cream instead of half and half. How I made that mistake I will never know, but when I say this stuff whipped up and was almost too gorgeous to consume I mean it. It was soooo fluffy and creamy!!! It worked like a charm and who knows, maybe I will start making all my creamers like this from now on??
Well I hope you enjoy this creamer as much as I do!!! Now where is fall?? I need cooler weather STAT!!

Instructions
In a blender mix together the half and half and sweetened condensed milk until smooth.
When those two items are blended together add in some pumpkin pie spice, vanilla and cinnamon to taste. (I think I did about a 1/2 TBS of each but you can just add a little and then taste it until it tastes right to you.)
Enjoy!

Looks great! I have noticed a lot of the pumpkin creamers do call for a spoon of pumpkin purée. I may do that, just wondering if I could freeze the rest of the can of pumpkin purée. ???

Just made this and it is SO good. It made a TON! How long will this last in the fridge?

It actually lasts quite a while in the fridge…I usually use mine up pretty quick (I like a LOT of creamer in my coffee). I think the longest I have kept mine for is a week. I think it would last longer though!
