I am using the thick variety of red poha which is hand pound, poha is completely gluten free, light on the stomach, and an excellent source of energy. It provides vitamin B1, iron, zinc, magnesium, vitamin c, vitamin A, and calcium. It contains no cholesterol and saturated fat. It is an excellent option for hypothyroid and pcod diet or for people who are anemic.

Poha is inexpensive and easily available and is a whole some food.

I used ghee in this recipe; did you know that ghee reduces the glycemic index of the food it is added too?


Ingredients:
1 cup poha
peanuts: 1/4 cup
1 tbsp: coconut oil or ghee
1/2 tsp mustard seeds
1/4 tsp fenugreek seeds
1 whole red chilli
1 sprig curry leaves
1 chopped onion
2 chopped green chilies
1/2 tsp turmeric powder
1 grated carrots
1/4 capsicum
1/2 tsp pink himalayan salt
1/2 lemon
