I had to bring my own Peppermint Crunch Ice Cream Pie to Thanksgiving dinner because I don’t love pumpkin pie (I know, I know . . . something is seriously wrong with me).
However, I do love all things peppermint flavored and I am a sucker for ice cream. The rest is history.
My family devoured this pie even faster than the pumpkin pie. I used a pre-made crumb pie crust, but you could definitely make your own crust if you are super ambitious.
How far in advance can I make this Peppermint Crunch Ice Cream Pie?
I LOVE ice cream, but have you ever taken it out of the freezer, and had a bite, and all you can taste is the freezer?
This recipe is wonderful because you can make it a little in advance, however, I would not make this too far in advance.
If you want to make this pie ahead of time, I recommend making and eating it within 3-4 days.
Otherwise it will begin to get freezer burned, and it will lose it’s delicious flavor.
I would definitely add the desired toppings right before serving, and not before storing in the freezer.

WHAT OTHER ICE CREAM FLAVORS COULD I MAKE THIS PIE WITH?
I am an ice cream pie and cake fanatic. I pretty much love all flavors, but here are a few of my favorite combinations, with the Oreo crust:
-Strawberry ice cream
-Cookies and Cream ice cream
-Rocky Road ice cream
-Chocolate ice cream
-Cookie Dough ice cream
-Mint Chocolate Chip ice cream
-Coconut ice cream
Really you could make this pie using any ice cream flavor. You could also switch out the Oreo pie crust, for graham cracker crust.
WHAT OTHER TOPPINGS COULD I PUT ON IT?
I am a toppings kind of girl. It’s not a recipe unless it is garnished, and has that extra kick of flavor.
My favorite toppings to add to this recipe are:
-candy canes
-crushed Oreo’s
-whipped cream
-chocolate sauce
-hot fudge
-melted chocolate chips
You could add any of your other favorite ice cream toppings as well, such as candy bar crumbles, sprinkles, bananas, etc.

Ingredients
- 3 pints peppermint ice cream (1 1/2 quarts)
- 1 oreo cookie crust (or other chocolate-flavored pie crust)
- 12 ounces fudge ice cream topping
- candy canes crushed
- whipped topping
Instructions
In a large bowl, stir ice cream until softened.
Spoon ice cream into pie shell and spread evenly. Return to freezer for about 3-4 hours (or until completely frozen).
To serve, let pie stand at room temperature for about 5 minutes before slicing. Serve topped with fudge topping, whipped cream, and crushed candy canes

What is really funny is that I made something VERY similar to this about 30 years ago for a priest friend of ours. FRIDAY night-he was talking about THAT pie. I think I have to make another one now- this one is a lot less labor intensive than the one I made. Happy Sunday- xo Diana
