Cold sweet potato salad is my new favorite summer dish! Why? Because this paleo sweet potato potato salad has everything you are looking for in a sweet potato salad recipe! It’s nutritious, easy to make, and a real crowd pleaser. Try this healthy sweet potato salad for your next party or get-together.

How To Make Sweet Potato Salad Paleo

I am pretty excited to share this easy potato salad recipe and explain how to make sweet potato salad paleo to fit your needs. Most potato salads are made with white potatoes and canola-based mayos, so simply swapping out the potatoes for sweet potatoes and the mayonnaise for an avocado oil mayo is an easy way to turn it into a paleo salad.

Here are the SUPER easy steps for how to make healthy sweet potato salad:

  • Cook the sweet potatoes. After you peel your potatoes, boil them until fork tender.
  • Prepare the dressing mixture. Mix your avocado mayo, Dijon mustard, orange juice, apple cider vinegar, smoked paprika, salt and pepper to a large bowl.
  • Gently toss in sweet potatoes, eggs, yellow onion and green onion.
  • Refrigerate until it’s ready to serve. Top with extra diced green onions as a garnish.

TIP: Sweet potato salad recipes are best if you let them chill for at least an hour or two, or overnight.

Cold Sweet Potato Salad Variations

You will be happy to know you can still keep this sweet potato salad paleo and add in extra flavorful ingredients! Of course, if you add or omit ingredients, the nutritional information will change.

Here are some fun ideas to add some extra flavors:

  • Red Potatoes – If you eat white potatoes, try adding some red or rainbow potatoes with the sweet potatoes. Not only does it give a sweet/savory flavor, but it also adds some color, too!
  • Celery – Don’t you love some extra crunch in your potato salad? I do! Add a quarter of a cup and toss it into the sweet potato salad.
  • Bacon – Seriously, bacon is so flavorful that it should practically be in its own food group. You can always make it on the stove top, but if you make bacon in the oven you will find there is so much less mess! Everyone will love this addition.
  • Jalapenos – Chop up one or two fresh peppers and add them to the easy sweet potato salad. You can leave the seeds in if you like it hot, or remove them if you are looking for a more mild flavor. Either way it will add some nice heat!
  • Grilled Chicken – You can transform this best potato salad recipe into a full meal by adding some protein. You can really add any meat that you want, but chicken is a natural fit.

Is Potato Salad Bad For You?

No, this sweet potato salad recipe isn’t bad for you. As long as you aren’t following a low carb diet, it’s actually good for you!

There are some homemade potato salads and store-bought potato salads that are made with processed ingredients. I prefer to use the best and real food ingredients with this healthy sweet potato salad, like I do with all my paleo recipes.

Here is a breakdown of some of the nutrients you get when you eat this sweet salad:

  • Sweet Potatoes – Vitamin A, vitamin B-6, potassium, protein, and magnesium.
  • Yellow Onions – Folate, vitamin C, potassium, and vitamin B6.
  • Green Onions – Zinc, fiber, folate, riboflavin, potassium, vitamin C, and calcium.
  • Apple Cider Vinegar – Potassium, amino acids, and antioxidants.

How Do You Store Healthy Sweet Potato Salad?

Store cold sweet potato salad in the refrigerator for 3-4 days. It’s important not to let it sit out for longer than 2 hours at a time, because it will start going bad if you do. You should always store the healthy sweet potato salad in an airtight storage container.

This sweet potato salad recipe is ideal for meal planning and prepping. You can make it early in the week and have it for a quick lunch idea for several days.

What To Serve With Sweet Potato Potato Salad

Add some protein to this healthy potato salad and you’ve got a balanced meal. Here are some of my favorite recipes to try:

  • Grilled Cilantro Lime Chicken Wings – These wings are seriously finger licking good!
  • Beef Chuck Eye Steak – There is nothing more delicious than a thick, juicy steak. Yum!
  • Low Carb Paleo Turkey Meatballs – Not only do these meatballs taste great, they are easy to make too!

I shouldn’t have been, but was surprised at how delicious this is! The only thing I didn’t have for the recipe was orange juice, but the flavors blended so well even without it.
This is going on my regular recipe rotation!

Recipes calls for 325g of potato, better off with 600g or it’s all mayo, egg, and onion
