I go a little bonkers for Chipotle guac! This is Chipotle’s Official Guac Recipe.

Yep, I am a guac on my vegan burrito plus more guac on the side kind of Chipotle customer. This guac recipe is easily my favorite thing about Chipotle. It’s a great place to eat vegan food when traveling or when I don’t want to prep my own food. Chipotle and I go waaaaay back. Like the early ’00s pre-vegan days back.

Here’s what’s vegan at Chipotle.

Before Chipotle kindly shared this recipe, some inquisitive folks speculated that the cherished guac had additional ingredients like garlic and tomatoes. Surprise! No garlic. No tomatoes. I love this very simple, 6-ingredient recipe.

Chipotle Guac Recipe, a thread

Ingredients:
2 ripe Hass avocados
2 tsp lime juice
2 tbsp cilantro (chopped)
1/4 cup red onion (diced)
1/2 jalapeño including seeds (diced)
1/4 tsp kosher salt

Live IG Video vs. Official Recipe

There are a few subtle differences between the Chipotle written recipe and the way that the Chipotle-employed chef in the Instagram video makes the guac.

Whisk Magic

In the live Chipotle Instagram video, the chef uses a whisk to mash avocados and mix the guac together. This gives it the signature creamy texture. Not a fork or potato masher—a whisk. It’s brilliant.

Juice

The Chipotle chef makes the guac with 3 avocados, stating that he uses half a lime’s worth of juice per avocado. That means the official Chipotle recipe is a little light on lime juice in comparison. You can expect to get about 3 teaspoons (equal to 1 TBSP) of juice per each half of lime. That means that the Chipotle recipe would use 6 teaspoons (equal to 2 TBSPs) of lime juice. Maybe someone wrote tsp when they meant TBSP? It could happen to anyone.

Additionally, the chef de-ribs and de-seeds the jalapeño in the video, but does mention that you can leave the ribs and seeds for spicier guac.

Regardless, I am so thrilled Chipotle shared their guac recipe. I just might eat a big bowl with a spoon. If anyone asks, it’s a guacamole salad minus the salad. Usually I take down guac with Easy Baked Tortilla Chips.

Avocado Prep

If you are unsure how to prep the avocados, just skip to 5:15 in the IG video, he’ll show you. I legit know someone who cuts the peel off of the outside of their avocados in little bits, losing lots of precious avocado meat. The thought of it makes my heart hurt.

If you are using a ceramic knife to prep your guac, use caution when removing the pit. I have actually broken a ceramic knife on a stubborn avocado pit. I twisted, the ceramic blade cracked.

Cilantro

If you are part of the population that thinks cilantro tastes like Dawn dish soap—I’m sorry, you are totally missing out. You should skip the cilantro. You could sub some scallions or flat-leaf parsley if you want. Otherwise, leave it out. I’m so very sorry about your taste buds.

Cut avocados in half and remove pits carefully. Pull the little nub from the stem off if it’s there, you don’t want it to end up in your guac, Scoop the avocados into a bowl. Toss and coat with lime juice.

Add the salt and mash until you have a smooth consistency. In the IG video, the Chipotle chef uses a whisk to mash. The whisk helps to achieve that lush, creamy texture.

Fold in remaining ingredients and mix. Taste the guac & adjust seasoning if necessary.

Alternatively, for very similar results, prep everything, put it all into the bowl and whisk and mash until it turns into creamy, delicious guacamole. Which is exactly how I do it.

Ingredients

  • 2 ripe Hass avocados
  • 2 teaspoons lime juice 2 TBSPs, the juice of one lime, if you go by the Chipotle IG video
  • 2 tablespoons cilantro chopped
  • 1/4 cup red onion diced
  • 1/4 teaspoon kosher salt
  • 1/2 jalapeño diced, in the video the chef de-ribs and de-seeds the jalapeño, but the official Chipotle released recipes reads, "with seeds." If you like it hot leave the seeds, otherwise de-rib and de-seed.
