I don't know about you, but my favorite time of year is fall. I just love everything about it. The cooler temperatures and the leaves changing colors make me so happy.

Fall also means apples and apple cider. Growing up in northeast Pennsylvania, I remember lots of trips to apple orchards. I'm not going to lie, my favorite part of those trips was always the apple cider donuts. There is just something so delicious about those sweet fried donuts rolled in cinnamon sugar.

I wanted to recreate that donut flavor in an easy to make sweet bread. This apple bread has plenty of apple flavor because I used fresh apples and apple cider. Of course, a coating of cinnamon sugar gives it a sweet flavor.

This apple cider bread recipe comes together in minutes. The longest step is reducing cider and letting it cool before using it.

  1. Place apple cider in a medium pan on high heat. Bring to a boil; reduce heat and simmer until reduced by half. Let cool.
  2. Beat butter and sugar in a large bowl.
  3. Add vanilla, egg, and shredded apple and mix again.
  4. Mix in the dry ingredients and cooled cider.
  5. Pour batter into a greased loaf pan that has been sprinkled with cinnamon sugar.
  6. Bake until a skewer inserted in the center comes out mostly clean.

Ingredients

For the Bread

  • 2 cups apple cider
  • ½ cup unsalted butter, softened
  • ⅓ cup granulated sugar
  • ⅓ cup packed brown sugar
  • 1 teaspoon vanilla extract
  • 1 large egg
  • 2 cups all purpose flour
  • 2 teaspoons baking powder
  • ½ teaspoon baking soda
  • 1 teaspoon table salt
  • 4 teaspoons apple pie spice
  • 1 ¼ cup shredded apples (1 large apple)

For the Coating

  • 2 tablespoons unsalted butter, melted
  • 5 tablespoons cinnamon sugar, divided

Instructions

  1. Place apple cider in pan on the stove and bring to a low boil. Reduce heat and simmer until it reduces in half. Remove and let cool.
  2. Preheat oven to 350 degrees. Spray a 9x5 bread pan with nonstick baking spray and sprinkle with 1 tablespoon cinnamon sugar.
  3. Beat softened butter and sugars until creamy. Add egg, vanilla, and shredded apples and mix again.
  4. Add the flour, baking soda, baking powder, salt, spice, and 1 cup reduced apple cider. Gently mix just until combined.
  5. Pour batter into prepared pan. Bake 50-52 minutes or until a skewer or knife inserted in the center comes out with just a few crumbs.
  6. Remove the pan from the oven. Let the bread cool in the pan for at least 15 minutes. Flip out and turn right side up. Let cool for 1 hour.
  7. Brush the top of the bread with melted butter. Sprinkle with cinnamon sugar. Repeat with all the sides. Let the coating set before slicing.

    Absolutely fantastic! In place of the 2 cups of AP flour, I used 1 cup of spelt flour + 1 cup whole wheat pastry flour. In place of 1/2 cup butter, I used 1/2 cup unsweetened applesauce. Instead of brown sugar and white sugar, I used 1/4 cup of maple syrup. It still came out wonderfully! Thank you!
