FALL SALAD RECIPE IDEAS

While we often think about turning to comfort foods in the fall, salads are another way to get the flavors of autumn! Some of the best fruits and vegetables are available in the fall, so take advantage of the fall harvest when you make any of these eight salad recipes!

I do crave all the soups and warm foods in the fall, however, I still love to make salads all season long. Salads are the perfect dish to take to a party or to add to the table for a Sunday dinner. There are endless ways to make a salad and you can always switch things up by just swapping out a few ingredients.

I gathered up some of my favorite fall salad recipes. One of my favorite dishes to bring to a gathering is a salad. Then, I can guarantee I will eat a vegetable or two. Plus, salads are a versatile dish that almost anyone likes to eat. These fall salad recipes would make great side dishes for Thanksgiving or a fall dinner.

ONE| KALE SALAD WITH ROASTED PUMPKIN, CRANBERRIES & GOAT CHEESE

Every year we plant a small front yard garden and one of the best crops of our garden is KALE. It never stops growing all the way into the winter. We have to get creative on how to use up all the kale. Good thing there are so many yummy fall kale salad recipes.

This Kale Salad with Roasted Pumpkin, Cranberries and Goat Cheese from Heather Cristo is delicious! If pumpkin is not your favorite, you can easily swap with butternut squash or sweet potatoes. I recommend you do not leave out the goat cheese as it really makes this fall salad so good!

I know not everyone loves kale, so if you really stand it, you could swap with spinach or arugula. But I do encourage you to try kale for this recipe. Be sure to use curly kale which is much easier to eat than the tougher kale options like flat or Lacinto Kale.

Quick Tip: Homemade dressings are so easy to make,. However, if you are short on time or you don’t know if everyone would like the same dressing, you could easily grab a few, high quality, store bought salad dressings. Look for salad dressing that just have a few simple ingredients and avoid the ones with a lot of added sugar!

TWO| ROASTED BUTTERNUT SQUASH SALAD

One of my favorite foods in the fall is roasted butternut squash. I love butternut squash in soups and also roasted to perfection. The rest of my family doesn’t seem to love butternut squash as much as I do, but I have found that they seem to buy into it when it’s in a salad.

This Roasted Butternut Squash Salad screams FALL to me. From the roasted butternut squash pieces to the just a little bit sweet salad dressing made with maple syrup it encompasses all the good flavors of Autumn.
